Chitosan-based Maillard self-reaction products: Formation, characterization, antioxidant and antimicrobial potential

چکیده
In this work, new chitosan derivatives (CS1-CS6) were obtained by short-term hydrothermal treatment. The formation of occurred through two simultaneous processes: hydrolysis and Maillard self-reaction. synthesized chitosan-based self-reaction products characterized physical measurements spectroscopic methods (viscometry, UV–Vis, FTIR, 1H NMR, TGA XRD). results showed that treatment solutions leads to a significant decrease (from ∼ 66500 up 20150 Da) in the viscosity-average molecular weight polymer. It has been shown antiradical activity CS1-CS6 was 2-5 times higher comparison with unmodified (1.42 µg ascorbic acid equivalents/mg). enhanced (R value ≥ 4-5) antimicrobial CS1-CS5 against gram-negative gram-positive bacteria including thermophilic highly heat-resistant Geobacillus stearothermophilus demonstrated.

Characteristics and antioxidant activity of Maillard reaction products derived from chitosan-sugar solution
The Maillard reaction occurring between amino group and carbonyl group produces neoformed compounds having certain levels of antioxidant activity depending on the reaction conditions and the type of reactants. In this study, maillard reaction products (MRPs) derived from four model systems including chitosan-glucose (CG), chitosan-fructose (CF), chitosanmaltose (CM) and chitosan-lactose (CL) so...
متن کاملThe potential antimutagenic and antioxidant effects of Maillard reaction products used as "natural antibrowning" agents.
The aim of this study was to investigate the potential antioxidative and antimutagenic effects of Maillard reaction products (MRPs) formed from glucose or fructose and cysteine or glutathione in the Ames Salmonella test and the 2,2'-azobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) assay. The mixtures were heated for 4 h 20 min or 14 h at 103 or 110 degrees C and tested in five concentrati...
متن کاملThe Maillard Reaction Application to Confectionery Products
2 Introduction The reaction between sugars and amino groups was first described in 1908 by two Englishmen, Ling & Malting, who considered color formation in beer. In 1912 Louis-Camille Maillard described a browning reaction between reducing sugars and amino groups. Despite not being the first to report the reaction, Maillard was the first to realize the significance of the reaction in areas as ...
متن کاملAntioxidant effects of Maillard reaction products obtained from ovalbumin and different D-aldohexoses.
Nonenzymatic glycation between ovalbumin (OVA) and seven D-aldohexoses was carried out to study the chemical and antioxidant characteristics of sugar-protein complexes formed in the dry state at 55 degrees C and 65% relative humidity for 2 d through the Maillard reaction (MR). The effects of Maillard reaction products (MRPs) modified with different aldohexoses on radical scavenging, lipid oxida...
متن کاملAntioxidant and anti-inflammatory activities of Maillard reaction products isolated from sugar-amino acid model systems.
We investigated the antioxidant and anti-inflammatory activities of both crude and ultrafiltrated Maillard reaction (MR) products (MRPs) derived from sugar-amino acid MR models, comprising fructose (Fru), glucose (Glu) or ribose (Rib) reacted with glycine (Gly) or lysine (Lys), respectively. Crude MRPs derived from Glu-Lys showed the greatest capacity (P < 0.05) to inhibit nitric oxide (NO) and...
